The Priciest Delicacies

The Fortress Stilt Fisherman Indulgence

This dessert is a truly unique culinary creation that unlocks truly rich flavors balanced to perfection.

It’s made on special request at the Fortress Resort & Spa in Galle, Sri Lanka.

We flavor the dessert, which features an Italian Cassata, with Baileys Irish Cream and serve it with a compote of pomegranate and mango.

The base is a delicious champagne sabayon enlighten, while the crowning glory is the 80-carat aquamarine stone, placed below an exquisitely handcrafted chocolate stilt fisherman.

Bluefin Tuna

Bluefin tuna are the largest tunas and can live up to 40 years.

They migrate across all oceans and can dive deeper than 3,000 feet.

Bluefin tunas are made for speed built like torpedoes, have retractable fins and their eyes are set flush to their body.

They are tremendous predators from the moment they hatch, seeking out schools of fish like herring, mackerel, and even eels.

They hunt by sight and have the sharpest vision of any bony fish.

The Truffle’s Extravagance: A Fungus Worth Its Weight in Gold

Truffles, including the highly prized white truffle from Italy and black truffles found in regions like France and Spain, are sought-after delicacies in gourmet cuisine due to their unique flavor profiles.

Truffle hunting is a secretive and thrilling pursuit, with skilled truffle hunters, often accompanied by specially trained dogs or pigs, searching for these elusive fungi hidden beneath the soil.

The secrecy and excitement surrounding truffle hunting add to their mystique.

We use truffles to enhance a variety of dishes, thanks to their potent aroma and earthy flavor.

From pasta and risotto to eggs and even ice cream, truffles add a touch of luxury and depth of flavor that chefs and food enthusiasts adore.

Their unique taste truly elevates any dish they grace.

Kopi Luwak: Sipping on the World’s Most Exclusive Coffee

Kopi Luwak’s production process involves civet cats, which consume ripe coffee cherries and then excrete the beans.

This unique method affects the coffee’s flavor, resulting in an exceptionally smooth and low-acidic taste that coffee enthusiasts savor.

However, the production of Kopi Luwak has raised ethical concerns related to animal welfare and sustainability, leading to debates and challenges in its sourcing.

Matsutake Mushrooms: A Forest Treasure Fit for Kings

Matsutake mushrooms hold a special place in Japanese cuisine and culture due to their cultural significance.

They are featured in traditional kaiseki cuisine and are symbols of honor and luxury in Japanese rituals.

Despite their revered status, harvesting matsutake mushrooms is a notoriously challenging task.

They often grow beneath forest canopies, making them difficult to locate.

The flavor of matsutake mushrooms is spicy and pine-like, making them a sought-after ingredient in Japanese cuisine.

Osetra Caviar Features medium-sized eggs with a nutty and briny flavor. Slightly firmer texture than Beluga caviar. Known for complexity and robust taste.

Sevruga Caviar Comprises small, grayish eggs with a strong and bold flavor, slightly salty and intense with brininess. Appreciated for its pronounced and vibrant flavors.
